There is a particular generosity in the antipasto tradition — the idea that before the meal even begins, something abundant and unhurried is already waiting on the table. No single dish anchors it. Instead, it is a conversation between textures and flavors: briny and tender, sharp and soft, roasted and cured. It asks very little of the cook and gives back quietly, in the way that the best hospitality always does. This is not a recipe so much as a way of setting the table with intention.
