Blueberry pie is one of those quiet, unhurried rituals that asks very little of you and returns something profound. There is something almost meditative about the way the filling comes together — the soft crush of fruit, the slow thickening, the scent that begins to rise from the oven long before the pie is ready. What makes this version linger in the memory is a small, considered addition: a touch of aged balsamic, dark and complex, that deepens the blueberries without overshadowing them. It doesn't announce itself. It simply makes everything taste more like itself.

Ingredients

  • two (2) pre-made (frozen) pie crust
  • 7 cups fresh blueberries
  • 1/4 cups cornstarch
  • 2 tablespoons Alessi Balsamic Vinegar
  • 1/3 cups honey
  • 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoons Alessi All Natural Sea Salt
  • 1/4 teaspoons ground cinnamon
  • 2 tablespoons butter, cut into 1/4" thick cubes
  • 1 large egg
  • 1 tablespoon water
