Earth and Sweetness, Quietly Balanced
There are dishes that feel like they came from the ground up — rooted, unhurried, honest. Farro is one of them. An ancient grain with a gentle chew and a nutty depth that doesn't ask for much, only a little patience and something worth pairing it with. Here, the earthiness of beets and the tenderness of wilted spinach find their footing together, finished with a slow ribbon of balsamic that pulls everything into focus. It's the kind of side dish that becomes the quiet center of the table.
