A great Caesar dressing is never quite what you expect — it's bolder, more layered, more honest. There's something almost alchemy-like about the way these ingredients surrender their individual edges and become something cohesive, glossy, and deeply savory. This version carries a little extra character: briny depth, a whisper of heat, the slow richness of good olive oil pulled into an emulsion. It's the kind of dressing that makes the salad feel like a destination, not an afterthought.

Ingredients

  • 1 large egg
  • 1 teaspoon Alessi Dipping Spices
  • 1 tablespoon Alessi Black Pepper
  • 2 teaspoons Alessi Garlic Puree
  • 2 teaspoons Worcestershire sauce
  • 5 whole Vigo anchovies
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon granulated garlic
  • 2 tablespoons water
  • 1/2 cups Vigo Feta Cheese
  • 1/2 cups Alessi Extra Virgin Olive Oil
  • 1/3 cups Canola oil

Instructions

  1. Using a food processor, add the first 9 ingredients.
  2. Process on low and then slowly add both oils through the opening until well blended.
  3. Add feta and finish mixing.
  4. The dressing will hold in the refrigerator for up to 14 days.
