Baked Garlic & Sea Salt Fries

There is something quietly satisfying about a fry that earns its crispness slowly, in the oven rather than a vat of oil. No rushing, no spattering — just patience and dry heat doing their steady work. The garlic settles in gently, the sea salt lands where it belongs, and the result is something that feels both humble and exactly right. These are the kind of fries that remind you that the simplest preparations, done with care, rarely need to justify themselves.

Ingredients

  • 1 1/2 pounds russett potatoes
  • 1 1/2 tablespoons Vigo Pure Olive Oil
  • 2 teaspoons Alessi Garlic Puree
  • Alessi Sea Salt and Ground Black Pepper, to taste
  • 1 tablespoon parsley, finely chopped

Instructions

  1. Preheat oven to 450°F.
  2. Line a baking sheet with aluminum foil.
  3. Cut potatoes lengthwise into ½” thick strips.
  4. In a small bowl combine olive oil and garlic puree.
  5. In a large bowl, toss potatoes with olive oil and garlic mixture; season with salt and pepper.
  6. Arrange potatoes in a single layer on baking sheet.
  7. Bake potatoes until golden brown and tender, turning occasionally; about 30-45 minutes.
  8. Turn oven to broil and cook an additional 5-7 minutes until potatoes are crispy.
  9. Let potatoes cool slightly, then season with parsley and add salt and pepper if desired.
