Tender Wings, Simple Magic
There is something quietly playful about a dish that earns its name from the shape of the pasta rather than anything dramatic on the plate. Farfalle — those small, folded bows that children and adults alike reach for first — carry a certain lightness to them, a sense that dinner doesn't always need to be serious. Pesto and ricotta together are a gentle pairing, creamy and herbaceous, the kind of combination that comes together in the time it takes to boil water and feel, briefly, like everything is unhurried.
