Homemade Caesar Salad Dressing

Bold, Ancient, and Quietly Honest

Caesar dressing is one of those recipes that reveals a cook's instincts more than almost any other. There is no heat to hide behind, no long simmer to coax things into harmony — only the careful layering of sharp and savory and bright, emulsified slowly into something smooth and unified. Made from scratch, it becomes less a condiment and more a quiet act of intention. The kind of thing you make once and then can never quite go back from.

Ingredients

  • 4 cloves garlic, minced or 2 tsp Alessi Garlic Puree
  • 1 teaspoon anchovy paste
  • 2 tablespoons lemon juice, fresh
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 egg yolk
  • 1/3 cups Alessi Extra Virgin Olive Oil
  • 1 tablespoon Parmigiano-Reggiano, grated
  • 1/4 teaspoons Alessi Sea Salt
  • 1/4 teaspoons Alessi Ground Black Pepper

Instructions

  1. In a medium bowl, whisk garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce.
  2. Then add egg yolk, extra virgin olive oil, Parmigiano-Reggiano and salt and pepper.
  3. Whisk until combined and serve.
