Combining these grains with only spring water and using special dies result in the highest quality of pasta in Italy. Alessi Mezzi Paccheri is a perfect pasta for thicker, meaty sauces or vegetables. The texture of the vintage dies allows for the sauce to better adhere to the pasta.
