Raspberry Balsamic Dressing

 Ingredients

  • 1/2 cup Alessi Extra Virgin Olive Oil
  • 1/2 cup Alessi Raspberry Balsamic Vinegar
  • 1/4 cup sugar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon dried oregano
  • Alessi Sea Salt and Ground Black Pepper, to taste

Directions

Combine all ingredients in a bowl and whisk until blended. Use as a dressing for your favorite salad.

Red Wine Risotto

Ingredients

  • 3 1/2 cups chicken broth
  • 3 tablespoons butter
  • 1 onion, minced
  • 1 teaspoon Alessi Garlic Puree
  • 1 cup Alessi Arborio Rice
  • 1/2 cup red wine
  • 1/4 cup parsley, finely chopped
  • 1/2 cup Parmesan cheese, grated
  • Alessi Sea Salt and Ground Black Pepper, to taste

Directions

Bring chicken broth to a low simmer in a small saucepan.

In a separate heavy bottomed saucepan, heat butter over medium heat. Add onion and sauté until soft and translucent. Stir in garlic puree. Mix in Arborio rice and stir until well coated. Then, add wine and stir until absorbed.

Add ½ cup of chicken broth to the rice. Continually stir while cooking until broth is absorbed. Continue adding ½ cup broth at a time until all broth has been absorbed.

Remove from heat, stir in parsley and cheese; season with salt and pepper.

Pesto Shrimp Pasta

Ingredients

  • 1 pound Vigo Linguini
  • 2 tablespoons Alessi Extra Virgin Olive Oil
  • 1 pound shrimp, peeled and deveined
  • Alessi Sea Salt and Ground Black Pepper, to taste
  • 1 teaspoon Alessi Garlic Puree
  • 1/4 cup Alessi Pesto
  • 1/4 cup ricotta cheese

Directions

Cook pasta according to package directions, drain and toss with 1 tablespoon olive oil.

Heat remaining olive oil in a sauté pan over medium heat.  Add shrimp and season with salt and pepper. Stir in  garlic puree and cook shrimp until pink and no longer translucent.

In a small bowl combine pesto and ricotta cheese. Add to pasta and toss to coat, add more olive oil if pasta becomes too sticky. Top with shrimp before serving. 

Espresso Drizzled Ice Cream

Ingredients

  • 2 scoops vanilla ice cream
  • 4 tablespoons prepared Alessi Espresso, divided
  • 2 tablespoons chocolate chips, divided
  • 2 Alessi Cantuccini

Directions

Place one scoop of ice cream in a small bowl. Top with 2 tablespoons of the espresso, 1 tablespoon of chocolate chips and garnish with a cantuccini. Repeat for other bowl.
