- 5 ounces baby spinach

- 4 large eggs
In a straight-sided skillet, heat 2 inches water over medium to a gentle simmer until a few bubbles break the surface. Add 2 teaspoons white vinegar to the simmering water.
Meanwhile, in a large skillet, heat oil over medium-high., add Alessi Garlic Puree and sauté until golden. Reduce the heat to medium and add the spinach, sautéing until wilted. Season spinach with Alessi Avocado Toast Seasoning to taste and drizzle lemon juice on top.
Crack 1 egg into a small bowl and gently tip into simmering water. Repeat with remaining 3 eggs. Cook until whites are set, and yolks are runny, about 2 to 3 minutes. With a slotted spoon, transfer to a plate lined with paper towels to drain.
To serve, divide spinach among 4 plates and top each with 1 egg. Season with additional Alessi Avocado Toast Seasoning and olive oil if desired.
