Ingredients

  • 2 tablespoons Alessi Extra Virgin Olive Oil
  • 4 boneless, skinless chicken breasts
  • Alessi Sea Salt and Black Peppercorns, to taste
  • 2 tablespoons Alessi Garlic Puree
  • 1/4 cup Alessi V.S.O.P. Balsamic VinegarAdd Alessi V.S.O.P. Balsamic Vinegar to cart
  • 1/4 cup cherry tomatoes, halved
  • 4 slices fresh mozzarella cheese
  • fresh basil leaves, for garnish

Instructions:

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Season chicken breasts with salt and pepper, add them to skillet.
  4. Cook chicken for 4-5 minutes on each side, until browned.
  5. Reduce heat to medium-low, add garlic puree between chicken, vinegar over the chicken, and add cherry tomato halves to the skillet.
  6. Cook for another 5 minutes, spooning balsamic glaze over the chicken occasionally.
  7. Top each chicken breast with a slice of fresh mozzarella cheese.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until cheese is melted and bubbly.
  9. Garnish with fresh basil leaves before serving.
