Alessi Balsamic Caprese Chicken

Ingredients
- 2 tablespoons Alessi Extra Virgin Olive Oil
- 4 boneless, skinless chicken breasts
- Alessi Sea Salt and Black Peppercorns, to taste
- 2 tablespoons Alessi Garlic Puree
- 1/4 cup Alessi V.S.O.P. Balsamic VinegarAdd Alessi V.S.O.P. Balsamic Vinegar to cart
- 1/4 cup cherry tomatoes, halved
- 4 slices fresh mozzarella cheese
- fresh basil leaves, for garnish
Instructions:
- Preheat oven to 375°F.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Season chicken breasts with salt and pepper, add them to skillet.
- Cook chicken for 4-5 minutes on each side, until browned.
- Reduce heat to medium-low, add garlic puree between chicken, vinegar over the chicken, and add cherry tomato halves to the skillet.
- Cook for another 5 minutes, spooning balsamic glaze over the chicken occasionally.
- Top each chicken breast with a slice of fresh mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, until cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
