Alessi Balsamic Glazed Roasted Vegetables

Ingredients
- 4 cups mixed vegetables (such as bell peppers, zucchini, carrots, and red onion), cut into bite-sized pieces
- 2 tablespoons Alessi Extra Virgin Olive Oil
- Alessi Sea Salt and Black Peppercorns, to taste
- 2 tablespoons Alessi Balsamic Reduction
- fresh chopped parsley for garnish
Instructions:
- Preheat oven to 400°F.
- In a large bowl, toss mixed vegetables with olive oil, salt, and pepper until evenly coated.
- Spread vegetables in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until vegetables are tender and slightly caramelized.
- Remove from oven and drizzle Alessi Balsamic Reduction over the roasted vegetables.
- Toss gently to coat evenly.
- Transfer to a serving platter, garnish with fresh chopped parsley, and serve as a flavorful side dish or vegetarian main course.
