Ingredients

  • 4 cups mixed vegetables (such as bell peppers, zucchini, carrots, and red onion), cut into bite-sized pieces
  • 2 tablespoons Alessi Extra Virgin Olive Oil
  • Alessi Sea Salt and Black Peppercorns, to taste
  • 2 tablespoons Alessi Balsamic Reduction
  • fresh chopped parsley for garnish

Instructions:

  1. Preheat oven to 400°F.
  2. In a large bowl, toss mixed vegetables with olive oil, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20-25 minutes, or until vegetables are tender and slightly caramelized.
  5. Remove from oven and drizzle Alessi Balsamic Reduction over the roasted vegetables.
  6. Toss gently to coat evenly.
  7. Transfer to a serving platter, garnish with fresh chopped parsley, and serve as a flavorful side dish or vegetarian main course.
