Ingredients

  • 3 1/2 cups coconut milk
  • 1 1/2 cups Alessi Medium Grain Pearled Farro
  • 1/4 cup agave nectar
  • 1/2 teaspoon coconut extract
  • seasonal fruit (mango, strawberries, blueberries, bananas)
  • Vigo Chia Seeds (optional)

Directions

Combine coconut milk, farro and agave nectar in a heavy bottomed pan with tight fitting lid.  Bring to a boil while stirring.  Reduce heat to simmer and cook, covered for 40 minutes.  Stir in coconut extract.  Serve with fruit and sprinkle with chia seeds for a protein packed power breakfast.

Makes 4 – 6 servings.

Leftovers may be refrigerated and microwave reheated with more coconut milk.
