Pumpkin Olive Oil Cake

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/4 teaspoons pumpkin pie spice
  • 1/2 teaspoon Alessi All Natural Sea Salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, light or dark packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup Alessi Extra Virgin Olive Oil
  • 1 cup canned pumpkin puree
  • 1/2 cup powdered sugar for dusting

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Prep small to medium Bundt pan with oil and set aside
  3. Mix together dry ingredients in a bowl and set aside
  4. In another bowl, mix eggs, vanilla, oil and pumpkin puree until combined
  5. Add dry ingredients to mixture ¼ at a time to ensure a smooth batter
  6. Pour batter into prepared baking pan and bake for 30-40 minutes (until a toothpick comes out clean)
  7. Let cool then remove from pan, dust with ½ of powdered sugar and serve!
