Pumpkin Olive Oil Cake

Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 1/4 teaspoons pumpkin pie spice
- 1/2 teaspoon Alessi All Natural Sea Salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, light or dark packed
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup Alessi Extra Virgin Olive Oil
- 1 cup canned pumpkin puree
- 1/2 cup powdered sugar for dusting
Instructions:
- Preheat oven to 350 degrees Fahrenheit
- Prep small to medium Bundt pan with oil and set aside
- Mix together dry ingredients in a bowl and set aside
- In another bowl, mix eggs, vanilla, oil and pumpkin puree until combined
- Add dry ingredients to mixture ¼ at a time to ensure a smooth batter
- Pour batter into prepared baking pan and bake for 30-40 minutes (until a toothpick comes out clean)
- Let cool then remove from pan, dust with ½ of powdered sugar and serve!
