Break toasts into large chunks and place in a mixing bowl. Drizzle olive oil over toasts and use your hands to mix, making sure all toasts have been coated.  Sprinkle with the parsley, parmesan, salt and pepper and toss gently to coat toasts evenly.

Serve with your favorite salad or as a topping for soup.
